White Chocolate Cream-filled Cupcakes – Recipe

 

Makes 12 stuffed cupcakes.

Ingredients Cupcakes:
1 box DCD Chocolate Baking Mix
½ cup butter (1 stick)
2 large eggs, at room temperature
½ cup hot water

Ingredients Frosting:
1 package (8 oz.) cream cheese, softened
¼ cup butter (½ stick), softened
6 oz. DCD Chef-Series White Chocolate (3 bars)
1 teaspoon vanilla extract
2½ cups powdered sugar, sifted

Tools:
DCD Pastry Bag with tip
DCD Spatulas

Directions:
1. Preheat oven to 350°F. Make and bake cupcakes as directed on box. Cool completely, about 30 minutes. In the meantime, prepare frosting.
2. In a microwave-safe bowl, heat white chocolate on medium power for 20-second intervals until completely melted and smooth, stirring between intervals. With an electric mixer on low, beat cream cheese and butter for about 30 seconds, until smooth. Add melted white chocolate and vanilla to cream cheese mixture and beat until combined. Keep beating and gradually add powdered sugar until frosting is stiff and fluffy, about 2 minutes.
3. Scoop frosting into pastry bag and twist until tight. To fill cupcakes, push the metal tip through the top of a cupcake, about halfway in. Squeeze approximately 1 tablespoon of frosting, being careful not to split the cupcake. Fill each cupcake, and use the remaining frosting to cover the top of the cupcakes.
